|Mise en Place|
|1 head||cabbage, shredded||1/2 cup||mayo|
|1||carrot, grated||2 tbs||rice vinegar|
|1/4 cup||minced onion||1 tsp||kosher salt|
|1/2 tsp||celery seed|
|1/2 tsp||black pepper|
|1||Toss cabbage and carrots with salt|
|2||Place in a colander, cover with a dish towel and let sit 1 to 4 hours until wilted|
|3||Prepare a bowl of ice water, and rinse cabbage/carrots in it.|
|4||Drain in a colander, and then press to get rid of excess water|
|5||Pat dry with paper towels|
|6||In serving bowl, mix mayo, onions, vinegar, celery seed,
|7||Add in carrots and cabbage, toss to combine and serve|
You can wilt the cabbage & carrots the day before, stash in the fridge and toss with dressing just before serving to finish.
