Words don’t do it justice. Make this.
Ingredients
- 1 lb ground pork
- 4 small bok choy
- 1/2 cup scallions thinly sliced
- 1 thai chili thinly sliced (more if you want more spicy)
- Basil
- 2 inch piece ginger minced fine
- 4 garlic cloves minced fine
- 8 oz rice noodles
- 1/4 cup + 2 tbs soy
- 1 + 1/2 tbs rice wine vinegar
- 1.5 tbs toasted sesame oil
- 1 tbs toasted sesame seeds
Directions
- Trim bok choy, slice stems, keep leaves whole
- Finely chop ginger and garlic – want equal proportions
- Start cooking noodles – when done rinse with cold water
- Cook pork – season with salt, 2 tbs soy, ½ tbs vinegar at end, set aside when done
- Cook ginger, garlic, chile, bok choy stems, half of scallions
- Add leaves, pork, noodles
- Add ¼ cup soy, 1 tbs vinegar. to taste
- Warm noodles, add remaining scallions
- Drizzle on sesame oil
- Toss with sesame seeds, serve with basil scattered on top
