Ritz Cracker Cod

Ritz crackers hold a special place in the pantheon of crackers. Golden, buttery, slightly salty, crisp but yielding, and addictive. You could eat sleeve after sleeve and still want more…

Cod on the other hand isn’t a riot of flavors, but it has its own advantages. Flaky, tender, and moist, its a perfect vehicle for more complex flavors.

So, do what a good New Englander would do, and combine. Crushed up buttery crackers, gussied up with more butter and herbs go a top a perfectly cooked piece of fish. Nice

With a side, serves 4. 30 minutes total to make


Mise en Place
DAIRY PRODUCE
1 stick butter 1/4 cup chives, minced
STAPLES 1/4 cup parsley, minced
1 sleve ritz crackers, crushed 1 lemon zested
1 tsp onion powder SEAFOOD
1 tsp granulated garlic 24 oz cod fillet
kosher salt
black pepper

Equipment
1 oven, 425
1 oven safe skillet
1 small sauce pan
1 mixing bowl

Directions
Step Action
1 Portion the cod into 4 equally sized pieces.
2 Season cod with salt and pepper
3 Melt butter in sauce pan on low
4 Put crushed crackers, chives, parsley, onion powder, and garlic in bowl. Toss to combine.
4 Arrange cod fillets bottom side up on skillet
5 Spoon melted butter over fillets, flip, spoon butter over other side
6 Pour remaining butter over cracker mixture, mix well.
7 Pile cracker mixture over fillets.
8 Place skillet in oven, cook for ~14 minutes
9 Evac, squeeze lemon juice over the top, rest 5 minutes
10 Serve and eat.
