You have for some unknown reason chosen to do a no carb diet. Or worse yet a no grain diet. Things are going well, but then it hits you, a desperate craving for red sauce. You can’t escape it. Perfectly sauced spaghetti haunts your dreams, but then your dreams turn to nightmares as you look closer and realize you are not eating pasta but instead you are eating zoodles.
Then out of nowhere you hear a voice, off key and strained, singing “Chicken Parm you taste so good” and you think Eureka, red sauce heaven! Then you remember the breading and the no carb thing and you break down crying in want of sauced cheesy goodness.
If that’s your state of mind, then this is for you. Or if you want something marginally more healthy than chicken parm that also tastes good and is super easy to make, then this is for you too.

1 | oven, preheated to 425 |

1 | Warm marinara on stove top |
2 | Lightly coat the sheet pan with olive oil |
3 | Cut the cauliflower into 1 inch thick steaks |
4 | Arrange the cauliflower on the sheet pan in a single layer |
5 | Brush the cauliflower with olive oil |
6 | Sprinkle salt liberally on cauliflower |
7 | Bake 17 minutes |
8 | Remove from oven |
9 | Flip cauliflower pieces and grind pepper on top |
10 | Return to ovven and bake an additional 17 minutes |
11 | Evac cauliflower from oven |
12 | Put oven into Broil mode |
13 | Adorn cauliflower with marinara, cover as well as you can |
14 | Sprinkle cheese on top |
15 | Broil for 2-3 minutes, watching carefully until you are satisfiyed with the blistering of the cheese |
16 | Serve and eat! |
