White Bean Cakes

Meatless Monday is upon us again. What to do. What to do.

Pasta? No. Rice? No. Some ancient grain thing? Oh hell no. How about something different. Fried eggs are good. Eggs on top of burgers are one of the best things on earth.

How about a fried egg on top of a veggie burger. Yum. Plate on top of a peppery arugula salad with a acidic lemon vinaigrette, and boom. Magic.

Serves 4: Takes at least 1 1/2 hours, most of that time is resting the patties

Mise en Place
2 cans white beans, drained and rinsed 2 tsp thyme, minced
black pepper, ground 1/4 cup parsley, minced
canola oil spray 2 lemons, juiced
5 tbs olive oil, divided 1 + 4 3 cloves garlic, minced
1/2 tsp table salt 1 large carrot, grated
1/2 tsp kosher salt 2 shallots, minced
1/2 handful sliced almonds 1 handful cherry tomato, halved
1/2 cup panko 3 handfuls baby argulua
n eggs 1 or 2 per person
1 egg beaten

1 skillet, medium low
3 mixing bowl
1 food processor
1 sheet pan
1 griddle, medium hot

Step Action
1 heat 1 tbs of oil in skilled
2 sweat carrots and shallots with a bit of salt till soft
3 add garlic and cook 1 minute
3 evac to bowl
4 add beans, 3 tbs of lemon juice, and big pinch of salt to food processor, puree
5 add bean puree to bowl
6 add beaten egg, panko, 1/2 tsp of kosher salt, and a few grinds of black pepper to bowl
7 mix thoroughly
8 line sheet pan with parchment paper
9 shape into 8 patties about 3/4 inch thick, and place on sheet pan
10 cover sheet pan with parchment and pop in fridge 1-8 hours
11 when ready to eat, make dressing. whisk together 2 tbs lemon juice, 4 tbs olive oil, and table salt to make dressing
12 in bowl, toss arugula, tomato, and almonds with dressing
13 plate salad
12 heat griddle, when hot, spray with cooking spray
13 cook bean patties, 3-4 minutes a side, evac to plates (2 patties per person)
14 when patties are done, wipe griddle with paper towel
15 spray griddle with cooking spray
16 fry eggs
17 top bean patties with eggs
18 crack on pepper if you like
19 serve and eat
