It’s summer time and that means delicious fresh fruit. And of course fresh fruit makes great dessert.
The best fruit is the fruit that you can smell from far away. When you go to the market, turn a corner and are overwhelmed by the sweet aroma of peaches, you know it’s go time.
There are lots of ways to turn a peach into desert, you could build a galette, make them into a pie or a cake, cut them up into ice cream, grill them to sweet perfection, blend them into a smoothie, or yes even fry them (try it with a little panko.
But best of all you can bake them into a cobbler, a crumble, or a crisp. I prefer a crumble, lots of chunks, lots of crispy brown bits, backed by prime peach goodness, and topped with ice cream.
It’s super simple to make, first you par bake a big shortbread cookie, then you crumble it on some macerated peaches and bake. Yum.

1 | fill 8×8 dish 3/4 of the way up with peaches, dump into bowl, save remaining for another use |
2 | toss peaches with 1/4 cup sugar, 1/2 tsp salt, cinnamon, ginger, and lemon juice, let sit, stirring occasionally |
3 | in food processor, pulse flour, 1/4 cup of almonds, 1/4 cup sugar, 1/4 cup brown sugar, 1/4 tsp kosher salt, and vanilla extract 5 times to combines |
4 | add butter and pulse till combined (10-15 pulses, it will look crumbly) |
5 | dump contents onto sheet pan and form into a disk about 3/8’s of an inch thick. try to keep it even thickness, if it tapers off at the edge it will burn. |
6 | pop sheet pan into the oven for 15 minutes. then evac, you should have a crisp cookie |
7 | stir peaches and dump into 8×8 dish |
8 | break the cookie into hunks of various sizes, top peaches with it in an evenish layer. sprinkle any crumbs on top |
9 | sprinkle remaining almonds (or more if you like) on top |
10 | sprinkle 1 tbs sugar over top |
11 | pop in oven, cook 30-40 minutes or until golden brown |
12 | let cool 10ish minutes |
