Frisee aux Lardon aka Breakfast Salad

Breakfast salad. Healthy (it’s salad after all,) delicious (it has bacon after all,) awesomeness. Sunny side up eggs, leave plenty of yolky goodness to take this from nicely dressed frisee to maximal deliciousness. Add in bacon, and the bitter spicy bite of radish and you’ve got a perfect breakfast.

Mise en Place
PRODUCE STAPLES
2 heads frisee, cored, roughly chopped kosher salt
4 radishes, thinly sliced 7 tbs evoo
1 medium shallot, minced canola oil
1 medium clove garlic, minced PROTEIN
1 lemon, zest and juice 4 strips thick bacon, cut into lardons
DAIRY
4 eggs

Equipment
1 frying pan, medium high
1 salad spinner

Directions
Step Action
1 wash, spin, and dry frisee
2 cook bacon over medium high heat
3 evac bacon when crisp, and drain on paper towels
4 whisk lemon juice, zest, shallots, garlic, evoo, and a big pinch of salt
5 taste dressing, adjust seasoning
6 toss frisee, radish, bacon with dressing, plate
6 wipe frying pan clean
7 add a couple tbs of canola oil to pan
8 fry eggs
9 top salad with eggs
10 add fresh cracked pepper
11 serve and eart
