Pancakes
These will make your weekend. The secret? Patience, that and fresh baking soda/powder. Have all three and you will be rewarded with fluffy deliciousness.

In a large bowl, whisk together flour, sugar, powder, salt, and soda |

In a separate bowl, crack egg, and beat lightly |

Add eggs and buttermilk to dry ingredients, and mix till it just comes together |

Spray griddle with oil, and using a measuring device, pour batter on to the griddle to create pancakes |

Be patient. Wait till they bubble. Once they do, check progress by peeking underneath. Once they look golden brown and delicious, flip. |

After 2 minutes, check pancakes. If golden, evac to plate and keep warm in oven |

Repeat steps 4-6 till all the batter is gone |
