A worth quick meal for a weeknight, if you are feeling like you need to eat healthy. This is scaled for 2, double as needed.
Ingredients
- Salmon filets
- handful of cherry tomatoes
- 1 cup shelled peas cooked
- 2 tbs melted butter
- 3-5 tbs cream
- 1-2 tbs lemon juice
- 10 medium basil leaves
- salt & pepper
- olive oil
Directions
- Spin peas, butter, cream, lemon juice, basil, salt, pepper with a stick blender
- Adjust cream and lemon juice until you are happy with consistency and taste
- Meanwhile, heat oil over medium heat
- Sear salmon – couple of minutes each side
- Evac salomn
- Blister tomatoes in pan
- Plate and serve

I got Diana Henry’s Simple for v-day. It has some good stuff in it. With a two year old and a six week old, simple sounds like a good idea. This is a simplification of one of the recipes in her book.
