WARNING WIP
A nice side dish for something wintery, like roast pork
Ingredients
- 1 cup farro
- 1 butternut squash, peeled and cut into 1/2 dice
- 4 cremini mushrooms sliced
- 1 red pepper diced
- 1 shallot sliced thin
- juice of 1/2 lemon
- 4 tbs olive oil + 2 tbs olive oil + 1 tbs
- 1 tbs butter
- 1/4 cup parsley roughly chopped
- 1/4 cup mint torn
- microplaned parm
Directions
- Cook farro according to directions on package, drain and let cool
- Meanwhile, heat oven to 400
- Toss squash with 2 tbs olive oil + salt and pepper
- Roast 30 minutes, turn over at 15 minutes
- Toss red pepper with 1 tbs olive oil
- Roast 15 minutes
- Meanwhile Cook mushrooms and shallots in butter
- When everything is done and cooled a bit, toss to combine
- Fold in parsley, mint, olive oil, lemon juice
- plate and top with parm
