Butternut Squash, Mushrooms, and Farro

WARNING WIP

A nice side dish for something wintery, like roast pork


Ingredients

  • 1 cup farro
  • 1 butternut squash, peeled and cut into 1/2 dice
  • 4 cremini mushrooms sliced
  • 1 red pepper diced
  • 1 shallot sliced thin
  • juice of 1/2 lemon
  • 4 tbs olive oil + 2 tbs olive oil + 1 tbs
  • 1 tbs butter
  • 1/4 cup parsley roughly chopped
  • 1/4 cup mint torn
  • microplaned parm

Directions

  1. Cook farro according to directions on package, drain and let cool
  2. Meanwhile, heat oven to 400
  3. Toss squash with 2 tbs olive oil + salt and pepper
  4. Roast 30 minutes, turn over at 15 minutes
  5. Toss red pepper with 1 tbs olive oil
  6. Roast 15 minutes
  7. Meanwhile Cook mushrooms and shallots in butter
  8. When everything is done and cooled a bit, toss to combine
  9. Fold in parsley, mint, olive oil, lemon juice
  10. plate and top with parm
