Bourdain was right, these nuts are addictive. With a little tweaking they’ll be nuts!
|Mise en Place|
|2 large||egg whites|
|2.5 lb||mixed nuts|
|1/4 cup||brown sugar|
|1 tbs||ground cinnamon|
|1 tbs||kosher salt|
|2||Big mixing bowls|
|1||Preheat oven to 325|
|2||Whisk egg whites to soft peaks|
|3||Put nuts in a large bowl, top with spices & salt|
|4||Fold in egg whites|
|5||Spread out on a sheet pan|
|6||Bake for 30 minutes, stir every 10|
|7||Evac, stir, and let cool completely|
These will be a little sticky when they come out, its ok, they will dry as they cool. Don’t burn them trying to get them dry.
Let them cool before you eat. Much better that way.
