Farro w/ Mushrooms

Farro is delicious.  No really, it’s delicious

  • 1 cup farro
  • 1 lb mushrooms (your choice, i just use the cremini)
  • 2 tbs lemon juice
  • 7 tbs olive oil
  • handful of parsley, chopped
  • parm to grate


  1. Cook farro
  2. Slice mushrooms and cook in butter
  3. Let farro and mushrooms chill
  4. Toss with lemon juice, oil, and parsley
  5. Top with a generous shower of micro-planed parm
  6. Fold to combine
  7. Plate
