Leek and Goat Cheese Quiche

I can confirm that real men do indeed eat quiche.


Pie Crust Ingredients

  • 1 1/4 cups ap flour
  • 1/2 tsp table salt
  • 1 tbs sugar
  • 4 tbs butter cut into pieces
  • 3 tbs crisco
  • 4 tbs ice water

Pie Crust Directions

  1. Pulse dry stuff together
  2. Add butter pulse 5 times
  3. Add shortening pulse 5 times
  4. Evac to mixing bowl
  5. Scatter 4 tbs water over mixture
  6. Press with bench scraper into dough.  Add extra water if needed
  7. Shape into ball
  8. Cover with plastic wrap
  9. Refrigerate overnight
  10. The next day, take dough out, let sit for 30 minutes
  11. Heat oven to 375
  12. Using a huge ziploc bag, roll out dough
  13. Cut away top of bag
  14. Put buttered pie pan over dough, flip and press dough into pan
  15. Flute and make it pretty
  16. Bake with pie weights over foil for 17 minutes

Quiche Ingredients

  • 1 big or two medium leeks, sliced white and light green parts
  • 2 tbs butter
  • 1 small thing of fresh goat cheese
  • 2 eggs + 2 egg yolks
  • 1 1/2 cup half and half
  • 1/2 tsp table salt
  • 1/2 tsp white pepper
  • 1/8 tsp microplanned nutmeg

Quiche Directions

  1. Preheat oven to 375
  2. Cook leeks slowly over low heat w/ butter and salt till soft
  3. Meanwhile whisk eggs, half and half, salt, pepper, and nutmeg together
  4. Scatter leeks on bottom of pie crust
  5. Crumble and scatter goat cheese on top of leeks
  6. Open oven, pull out middle rack half way
  7. Place pie pan on the rack
  8. Laddle in egg mixture
  9. Carefully slide rack back into oven
  10. Cook ~33 minutes
  11. Let cool 30 minutes
