If your going to have steak, you need a side


Ingredients

  • 1 big box of baby spinach
  • 1/4 lb bacon cut into batons
  • 1 small shallot
  • 1 tbs shallot
  • 1 cup half and half
  • 2 tbs flour
  • 2 tbs butter
  • nutmeg

Directions

  1. In a saucepan, make a light roux (2 tbs each flour & butter), take off heat whisk in cream, put back on low, microplane in some nutmeg
  2. Cook bacon, set aside
  3. Sweat shallot in 1 tbs butter
  4. Wilt spinach
  5. Add bacon
  6. Add cream till it seems right
  7. Serve
