Another classic
Ingredients
- 1 butternut squash
- 2 tbs butter
- 2 shallots minced
- 3 cloves garlic
- 1 box chicken stock
- 1/4 cup half and half
Directions
- Cut squash in half, deseed, apply butter and salt
- Roast squash cut side up 60-70 minutes in oven @ 425
- Skin squash cut into chunks
- In dutch oven, cook shallots and garlic
- Add squash and chicken stock
- Cook 30 minutes.
- Spin off heat
- Add half and half
