|Mise en Place|
|1 tsp||kosher salt||3/4 cup||heavy cream|
|1/2 tsp||white pepper||1 stick||butter|
|1 head||cauliflower, cut up|
|1||pot, with steamer basket|
|1||steam cauliflower till fork tender ~14 minutes|
|2||meanwhile, over low heat, combine cream and butter in sauce pan and let butter melt|
|3||evac cauliflower to bowl|
|4||3/4ths of the butter and cream mixture, plus all of the salt and pepper|
|5||hit it with the stick blender, if it is too thick for your liking, add more butter and cream|
|6||taste and adjust salt|
|7||serve with your favorite protein|
