Mise en Place
2 lbs grated potatoes 1/2 cup minced onion
3 eggs lightly beaten 2 tbs ap flour
2 tsp kosher salt canola oil

1 skillet
1 mixing bowl

Directions
Step Action
1 Heat oil over medium high heat in skillet
2 using kitchen towel, wring as much moisture out of the potatoes as possible
3 combine potatoes, egg, flour, salt, and onions
4 using a spoon or ladle, place a big spoonful or two into the pan, shape into pancakes. fry 3-4 minutes a side until browned on both sides. you can do 3-4 at a time, don’t overcrowd the pan.
5 Evac to a paper lined plate, repeat till all of the batter is cooked
6 Serve with applesauce or sour cream or a sunny side up egg on top.
