| Step | Action |
| 1 | Heat oil over medium high heat in skillet |
| 2 | using kitchen towel, wring as much moisture out of the potatoes as possible |
| 3 | combine potatoes, egg, flour, salt, and onions |
| 4 | using a spoon or ladle, place a big spoonful or two into the pan, shape into pancakes. fry 3-4 minutes a side until browned on both sides. you can do 3-4 at a time, don’t overcrowd the pan. |
| 5 | Evac to a paper lined plate, repeat till all of the batter is cooked |
| 6 | Serve with applesauce or sour cream or a sunny side up egg on top. |
