Mmmmm…curry. Love this stuff. Is it traditional? I don’t know, who cares.
Ingredients
- 2 tbs green curry powder
- 1 tbs fish sauce
- 1 tbs oil
- 1 tbs garlic chopped (2 cloves)
- 1 tbs ginger
- 1 tbs chopped lemongrass
- 1.5 lbs chicken cubed
- 1 tbs tumeric
- 1 zuchinni + 1 yellow squash coined
- 1 carrot coined
- 1 bell pepper chopped
- 2 scallions sliced
- zest and juice of 1 lime
- 2 cans coconut milk
- 1/2 box chicken stock
- Cooked rice
Directions
- Combine curry powder, fish sauce, oil into paste
- Toss chicken with 1 tbs salt and tumeric
- Brown chicken w/ canola oil in wok or saucier, evac when done
- Cook carrots, bell pepper. Move to side
- Add squash and scallions. Cook quickly move to side
- Add paste cook 30 seconds
- Add ginger, garlic, lemongrass, cook 1 minute
- Add stock & milk.
- Add lime and fish sauce to taste
- Add chicken
- Serve over rice
F-Yeah. You can change this around with different veggies, or use a sturdy white fish instead of chicken.
