Bourdain’s Bitch’s Nuts

Bourdain was right, these nuts are addictive.  With a little tweaking they’ll be nuts!


Mise en Place
Staples
2 large egg whites
2.5 lb mixed nuts
1/4 cup sugar
1/4 cup brown sugar
1 tbs cayenne
1 tbs ground cinnamon
1 tbs kosher salt

Equipment
2 Big mixing bowls
Oven @ 325

Directions
Step Action
1 Preheat oven to 325
2 Whisk egg whites to soft peaks
3 Put nuts in a large bowl, top with spices & salt
4 Fold in egg whites
5 Spread out on a sheet pan
6 Bake for 30 minutes, stir every 10
7 Evac, stir, and let cool completely

Notes

These will be a little sticky when they come out, its ok, they will dry as they cool.  Don’t burn them trying to get them dry.

Let them cool before you eat.  Much better that way.
