Farro is delicious. No really, it’s delicious
- 1 cup farro
- 1 lb mushrooms (your choice, i just use the cremini)
- 2 tbs lemon juice
- 7 tbs olive oil
- handful of parsley, chopped
- parm to grate
Directions
- Cook farro
- Slice mushrooms and cook in butter
- Let farro and mushrooms chill
- Toss with lemon juice, oil, and parsley
- Top with a generous shower of micro-planed parm
- Fold to combine
- Plate
