Tri-tip is a west coast thing.  It looks funny, but tastes amazing.  I suggest you come out here and try it.


Ingredients

  • 1 tri tip
  • 2 tbs garlic powder
  • 2 tbs salt
  • 2 tbs parsley
  • 1 tbs pepper

Directions

  1. Trim the tri tip – the fat cap needs to be reduced, not gone, but reduced
  2. Rub – get all that stuff on there
  3. Sear 3 minutes per side
  4. Smoke (used oak, nothing fancy) to 130 @ 300
  5. Rest 15
  6. Slice and serve
